Maple Smoked Bacon Egg Salad


Fresh homemade bread and egg salad....now that's lunch.

I am not a sandwich person....,BUT.....the other day I had a huge craving for an EGG SALAD SANDWICH.....of course this is me we are talking about here.....

....nothing is simple when it comes to me and my cravings....not only I was craving Egg Salad.....I was also craving crisp bacon.

What is a girl to do? Combine them. That's what I did.

I didn't have time to make homemade bread so I settled for Grand Buttermilk Biscuits (always in my fridge).

Maple smoked bacon was my other favorite team player and it gave the egg salad smoky and little sweet flavor.
I used shallots instead of onion (how foodie of me) and I added some fresh parsley.
The egg salad turned out awesome and the lunch.....what can I say....I feel like doing it all over again just by writing this post.


Ingredients:
  • 4 Hard Boiled Eggs (chopped)
  • 1 Shallot (finely chopped)
  • 1 Tbsp Parsley (chopped)
  • 4 Crispy Strips of Maple Smoked Bacon (chopped)
  • 2 Tbsp Light Mayo
  • 2 Tbsp Deli Mustard

STEP 1: In a bowl combine all of the ingredients until it's the perfect Egg Salad consistency.


I didn't have any lettuce and tomato on hand make it "the ultimate egg salad sandwich" , but I recommend serving in with lettuce and tomato as well.
