Chocolate Cherry Strudel

Last week I was inspired by Catalina and her Strawberry Vanilla Strudel.

Being raised in Central Europe loving strudels is in your DNA and every mom should be able to make a good strudel (not mine, sorry mom).

However, my dad....well, there is a man who knows how to bake.....and STRUDELS....are his specialty.

To make my dad proud and my country I ventured into the cherry orchard in my backyard last night and picked myself bucket of cherries for my famous well at least around my house CHOCOLATE CHERRY STRUDEL.

I baked till late and this morning.....for a few minutes....I was the best mom in the whole universe.....cause I let them have cake strudel for breakfast.

Do you want to make your own Chocolate Cherry Strudel....it's easy.....nothing to it.....

PRINTABLE VERSION

Ingredients:
  • Pkg Ready To Use Puff Pastry (I use Tenderflake)
  • 11/2 cup Crushed Nilla Wafers
  • 1/2 cup Sugar
  • 1 Egg
  • 2 Tbsp Butter (melted)
  • 1 Pkg Vanilla Sugar
  • 4 cups Cherries (pitted)
  • 1/2 cup Chocolate Chips
  • 1 Egg (for egg wash)
STEP 1: Preheat oven to 375F

STEP 2: In a small bowl mix together crushed wafers, sugar, egg and melted butter. Set aside.

STEP 3: Split puff pastry in half.

STEP 4: On floured surface roll out each half of the puff pastry to about 14" x 11" rectangle.

STEP 5: Gently spread half of the wafer and sugar mixture onto the puff pastry. Make sure you won't make any rips. Leave about 11/2" border around.

STEP 6: Top each puff pastry sheet with 2 cups of cherries, sprinkle with half of the package of vanilla sugar and 1/4 cup of chocolate chips.

STEP 7: Brushed the sides (border) lightly with egg-wash.

STEP 8: Fold one side of the puff pastry sheet over the filling and gently roll making sure all sides all well sealed.

STEP 9: Line cookie sheet with wax paper and gently place both strudels onto cookie sheet. Make sure they don't touch and leave at least 2" space between them.

STEP 10: Brush strudels with remaining egg-wash.

STEP 11: Bake for 30 minutes or until nice and golden brown.

STEP 12: When strudels are done. Turn off the oven. Slightly open the door and let strudels sit for about 10 minutes.

STEP 13: Take them out of the oven...let them cool...sprinkle with icing sugar.....SERVE!
