| Ricotta Garlic Roasted Potatoes |
Few times a week I try to make meatless dishes for our family dinner......even when we are camping.
Both of my boys are meat lovers, but slowly they got used to mom's meatless nights and actually look forward to it.
Having a meatless dinner few times a week is not only good for their health , but it keeps my food budget in check.
I myself don't need to eat much meat......... I do like it, but I take good meatless comfort food over hunk of meat anytime.
Last week I had a container of Ricotta that needed to be used.....soon. I wasn't sure what to use it for. I wanted to do something different.
I decided to make roasted potatoes with Ricotta and I named it Ricotta Garlic Roasted Potatoes.
My kids went crazy over it.
PRINTABLE VERSION
Ingredients:
- 5-6 Large Potatoes
- 1 Tbsp Olive Oil
- 5-6 Gloves Garlic (finely chopped)
- 1/4 cup Fresh Parsley (finely chopped)
- 1 1/2 cup Ricotta Cheese
STEP 2: Peel, wash , dry and quarter potatoes.
STEP 3: Put potatoes into baking dish and tossed them with olive oil until they are all covered. Salt.
STEP 4: In a small bowl combine together chopped garlic and chopped parsley. Toss it all over potatoes.
STEP 5: Bake potatoes for 30-35 minutes or until they are almost done. Half way through stir them around so they brown nicely on all sides.
STEP 6: After 30 minutes remove the potatoes from the oven. Drop spoonfulls of Ricotta cheese all over potatoes and put them back in the oven.
STEP 7: Broil potatoes on low for 10 minutes.
STEP 8: Remove from the oven and serve. Top with more fresh chopped parsley and serve it with a large glass of milk.
DELICIOUS and very FILLING.
