Low Sugar Chocolate and Cream Cheese Cupcakes

The other day my boys and I felt like we need something....something....We decided to make some CHOCOLATE cupcakes.

My older son is Type 1 diabetic so I try to make my baking low sugar and diabetic friendly whenever I can.

Since we were making his favorite CUPCAKES I decided to go for low sugar version.... I knew he won't be able stop at just one....the something - something craving was pretty big.


I found a great recipe for Low Sugar CHOCOLATE & CREAM CHEESE CUPCAKES few months ago in one of his diabetic magazines sorry,  I forgot which one so we decided give them a try......

Low Sugar Chocolate and Cream Cheese Cupcakes


This recipe will make 12 regular size cupcakes.

PRINTABLE VERSION:

Ingredients:

  • 11/2 cups Flour
  • 1/2 tsp Baking Soda
  • 1/2 tsp Baking Powder
  • 1/2 tsp Salt
  • 1/2 cup Sugar
  • 1/3 cup Splenda
  • 1/4 cup Cocoa Powder (unsweetened)
  • 1 cup Water
  • 6 Tbsp Oil
  • 1 tsp Vanilla
  • 4oz. Cream Cheese
  • 1 Egg (beaten)
  • 1/3 cup Splenda
  • 1/2 Chocolate Chips (unsweetened or semi-sweet)
STEP 1: Preheat oven to 350F. Line muffin pan with medium size baking cups.

STEP 2: In a bowl combine together flour, baking soda, baking powder, salt, sugar, Splenda and cocoa powder.

STEP 3: In another bowl combine water, oil and vanilla extract. Slowly add it to the dry ingredients mixture.

STEP 4: Use the empty bowl to cream together cream cheese, Splenda, egg and chocolate chips. The mixture would be little runny not icing consistency.

STEP 5: Pour the chocolate mixture evenly into 12 baking cups. Spoon the cream cheese mixture in the center of each cupcake.

STEP 6: Bake for 20 minutes.Cool for couple minutes before placing onto cooling rack.

They look so good :O) You come up with some good ones.

I have one for you! Simmer 1 15.5 oz can of black beans in a pot with 1/2 can of water for 50 mins or so.

When the beans are done throw them in the blender and puree. Add that mixture to a Brownie Mix and you have a high protein, fiber, low sugar snack (19g of sugar).

These are the best and NOBODY will know they're in there. Let me know after you've tried them.

BTW, that astronomy set is an awesome deal hope you are able to snag it :O)

My dad is diabetic too so my mom always makes her cakes with reduced sugar and the icing too but we all agree that the cakes still taste just as good. The cream chesse makes these sound delicious! I'm just stopping by for Follow Friday, this is my first time participating. I've found a lot of great blogs that I've never seen before.
