| Decadent Chestnut Truffles |
Every Fall I get the desire to make treats with CHESTNUTS..... I love chestnuts, but it's not that kind of love that I would eat them year round.
It's more like.....I have a craving.....I make and eat chestnut treats for few week....then I am DONE.....till next time!
I know....I know....it's still summer.....and it doesn't look like it's ending any time soon...., but.......last week I shopped at my favorite little Italian shop and guess what was on SALE?
Yep......Chestnut puree......I couldn't resist buying few jars for upcoming fall and suddenly the CHESTNUT craving came.....
One of my favorite chestnut treats are CHESTNUT TRUFFLES...... They are so decadent and smooth.....they just melt in our mouth.
First time I made them I though
One bite and they were both hooked for life......great.....now I have to share!
PRINTABLE VERSION:
Ingredients:
- 500g Chestnut puree
- 150g Lady Fingers (Italian cookies)
- 1 cup Icing Sugar (if the chestnut puree is not sweetened add another 1/4 cup)
- 1 stick of Butter (room temperature)
- 2 pkg. Vanilla Sugar (little envelopes by Dr. Oetker)
- 1/3 cup of Butter
- 150g Chocolate or Chocolate chips
STEP 2: Add chestnut puree, icing sugar, vanilla sugar and butter. Mix well together until you have a smooth texture dough.
STEP 3: Cover the bowl and place it in the fridge for 2 hours.
STEP 4: When you are ready to make truffles melt chocolate and butter in a double boiler until chocolate is smooth and easy to pour.
STEP 5: Form little bite size balls from chilled chestnut dough.
STEP 6: Dip chestnut balls in the chocolate or pour the chocolate over them (I usually place them on cooling racks and pour chocolate over them).
STEP 7: Let the chocolate cool down and decorate the way you like. I use white chocolate and almond slivers.
TIP:
Sometimes I add little bit of dark rum into the dough for the "adult" version.
